spicy potato & red onion squash soup
|

- heat the butter and cook the onion and garlic gently until softened.
- add the spices, ginger, chilli, lime zest and honey and stir them in.
- cook for a minute to combine the flavours.
- add the stock, hlaf the lime juice, the sweet potato, squash and coriander leaves and bring to the boil.
- reduce to a simmer and cook the vegetables until tender, about 20 minutes.
- liquidise until very smooth adding more stock to achieve the right consistency.
- add the rest of the lime juice and season.
- serve with a swirl of coconut milk and a few drops of olive oil.

| ingredients (serves 4) |
- butter
- 1 medium red onion
- 2 garlic cloves
- 1 tsp each of cumin, coriander, and
sesame seeds
- an inch of fresh ginger root
- 1-2 green chillies
- finely grated zest and juice of 1 lime
- 1 tsp of honey
- 1.2L of bouillon stock
- 4 medium sweet potatoes
- 1 red onion squash
- handful of fresh coriander leaves
- 100ml of canned coconut milk
